Storage and Handling

Whether it's a simple tart or an extravagant torte, we are passionate about creating and serving our products. We want our guests to enjoy the finest we have to offer so we have painstakingly monitored and tested the best serving temperatures, storage procedures, and shelf life so that your product is of the highest quality when it arrives at its destination. We recommend the following handling and storage for your products. Please contact us if you have any questions about how our products should be handled, store, or served.

Dessert Cakes, Celebration Cakes, and Cheesecakes

Most of our cakes and cheesecakes are best served at 65-70 degrees. We recommend storing these products under refrigeration in the original box for up to three days. Be sure to remove all cakes from their box and allow them to sit at room temperature for at least 60 minutes before serving. Mousse cakes are a little more fragile and only require 15-20 minutes. Store all leftovers under refrigeration for up to three days, tightly covered, or double wrap in foil and freeze for up to thirty days. Hopefully there will be no need to freeze leftovers!

Tarts

Fruit tarts and other tarts with cream type fillings and fresh fruit should be served right out of the refrigerator. Consume product within 48 hours and do not freeze. Frangipane tarts can safely be held at room temperature for 24 hours and are best served at room temperature. They can be held under refrigeration for three days, although the crust may soften a little.

Coffee Cakes & Quickbreads

 These products can be safely held at room temperature for at least 48 hours. Keep them wrapped tightly. Refrigerate for longer storage of up to seven days, and freeze for up to thirty days. Be sure to bring products to room temperature for service. 

Danish, Croissants, and other breakfast pastries

These products are best if eaten within several hours of baking. Leftovers may be re-warmed if loosely wrapped in foil and placed in a 250 degree oven for several minutes.

Eclairs, Napoleons, and other refrigerated pastries

Consume these products within 24 hours of purchasing. We do not recommend freezing any of these products. Some of our petite fours do have a longer shelf life of up to five days if they are enrobed in chocolate or fondant.
